2 Super Healthy, Low Calories Recipes

Today I have 2 recipes for you that are super healthy, seriously filling and yet incredibly tasty. All the best part – just 300 calories a piece! Most people think eating low calorie and healthily means sacrificing flavour and enjoyment.

But it really doesn’t have to be that way – try these 2 recipes – I recommend them (and many more) to my clients and they can’t believe ow tasty and filling they are for just 300 calories. Give them go;

1/ Fish Stew with Fennel
Heat 1 teaspoon olive oil and fry 1 bulb sliced fennel, half an onion, 1 clove garlic.
Add 50ml wine and simmer for a few minutes. Add half can chopped tomatoes and 1 cup of fish stock and bring to the boil. Reduce the heat, add 150 grams of firm white fish (e.g. cod, haddock) and 5 olives. Simmer for 5 mins, stir in 3 handfuls of spinach and serve.

2/ Chicken and Vegetable Casserole
Pan fry 1 chicken breast (150 grams) in half teaspoon olive oil just to brown then remove. Then fry 1 clove garlic, half an onion, half a pepper, half a courgette, 1 cup of mushrooms. Add half tin of chopped tomatoes, put chicken back in pan and simmer for 15/20 minutes until chicken is cooked through.

The key with healthy cooking is to use herbs, spices and low calorie items to add flavour rather than fatty items such as oil and butter. Try these 2 recipes and you’ll see what a great, low calorie meal can be like.
