Healthy Baked Beans

Baked beans are a real home comfort favourite for a lot of people. They are tasty, quick and easy. The problem is apart from the beans themselves the rest of it is pretty unhealthy. It’s got high levels of salt and sugars to make it taste good, both of which you want to limit. It’s also full of preservatives and additives to allow it to be mass produced, canned and stored on the shelves for months and months without going off. So why not make them yourself and make healthy baked beans?

Ingredients

2 tins of haricot beans drained (you could use a different type of bean of you wanted)
1 red onion, finely sliced
1 clove of garlic finely sliced
Teaspoon rapeseed oil
Tinned of passata
1 Tsp paprika
Tsp oregano (or mixed herbs)
tsp Worcester sauce
Salt and pepper to taste
Small handful of parsley chopped (optional)

Cooking Instructions

Cook the onion and garlic over a low heat for about 5 mins. Add the salt, pepper, oregano and smoked paprika and pour in the passata, Worcester sauce and drained beans and simmer for around 15 minutes or until it reaches the thickness you want. I don’t think you need to add any additional sweetness as you will get that from the passata. If you use chopped tomatoes instead you may need to add some, but I would suggest using a tsp of honey instead of sugar as it will be healthier. Serve with the parsley.

And it freezes really well so you could make a big batch of it and freeze it up into portions so you can get it out as and when you need it. You won’t miss out on taste either these healthy baked beans are as good if not better than the tinned stuff and 10 times healthier!
