Sumptuous Summer Salads

With the summer ahead of us and lots of good weather (hopefully) the idea of salads becomes more appealing for most people. If you are not a fan of salads and view them as ‘diet food’ and ‘boring,’ please try these 2 salads. The key is to use ingredients to add colour, flavour and basically create a desire to eat them again! Without chucking in a load of unhealthy ingredients and calories of course! Try these sumptuous summer salads.

Tropical turkey salad

(380 calories)

120g (4 oz) chopped cooked turkey
30g low-fat sour cream
1 tbsp mango chutney (make you own – see sauces section for recipe)
1/2 tbsp fresh lemon juice
½ tbsp honey (organic)
1/4 tsp coriander powder
¼ tsp cumin
½ red pepper, diced
1 stalk celery, diced
40 grams (1 ½ oz) pineapple chunks
40 grams (1 ½ oz) orange segments
¼ of an onion, diced

There are no real cooking instructions obviously. Just throw it all together and enjoy!

Thai Chicken Salad

(270 calories)

120 g (4 oz) cooked chicken meat
80 grams (2 ¾ oz) mixed salad leaves
½ tbsp fresh lime juice
½ tbsp ginger, grated
½ tsp ground star anise
20 ml (1/10 cup) soy sauce
½ tbsp fish sauce
½ tsp honey (organic)
½ red chilli, seeded and finely chopped
1 spring onions, sliced
¼ cucumber, peeled, seeded and sliced
1 tomato, cut into wedges
½ tbsp chopped mint
½ tbsp coriander leaves
½ tbsp basil
black pepper

Directions: In a saucepan combine the lime juice, soy, ginger, star anise, fish sauce and honey. Cook for 2 minutes, leave to cool and combine with the rest.

Both these salads are easy to prepare, healthy and packed full of flavour. Definitely not ‘diet food.’ If your idea of a salad is a load of iceberg lettuce, a couple of tomatoes and some dry chicken then it’s no wonder you aren’t enjoying them. It doesn’t have to be boring, these recipes prove that.
